Grilled Corn Salad with Summertime® Gourmet Salsa

Preparation time: 10 minutes
Cooking time: 20 minutes
1½ teaspoon olive oil
4 ears corn
2 tablespoon Fresh lime juice
1 jar Summertime® Gourmet Salsa

1. Brush 1½ teaspoons Oil over corn. Prepare grill or broiler. Place corn on grill rack or
broiler pan; cook 20 minutes or until corn is lightly browned, turning every 5 minutes. Let
cool; cut kernels from cobs to measure approximately 2 cups.

2. Combine lime juice and half a jar of Summertime® Gourmet Salsa and lime juice in a
medium bowl; stir well. Add corn, continue adding Salsa until salad reaches a good
consistency.

Yield: 4 servings (serving size: 1 cup)

Summertime® Gourmet Salsa Black Bean Patties

1 tablespoon olive oil
¼ cup chopped onions
½ cup chopped red bell pepper
½ cup chopped green bell pepper
2 tablespoons Summertime® Gourmet Salsa
1 (15-ounce) can black beans, drained
1½ cup dry breadcrumbs
¼ cup yellow cornmeal
2 tablespoon minced fresh cilantro
1 tablespoon fresh lime juice
¼ cup (1 ounce) Monterey Jack cheese
Vegetable cooking spray
1 jar Summertime® Gourmet Salsa

1. Heat oil in a large nonstick skillet over medium-high heat. Add onion and next two
ingredients; sauté 3 minutes or until onion and peppers are tender. Add 2 tablespoon
Summertime® Gourmet Salsa and beans; sauté 1 minute. Combine bean mixture,
breadcrumbs, cornmeal, cilantro and lime juice in a large bowl; stir well.

Low-fat Summertime® Gourmet Salsa Mexican Quiche

1 cup egg substitute
½ cup water
½ cup low-fat buttermilk biscuit and baking mix
½ cup instant nonfat dry milk powder
½ cup plain nonfat yogurt
2 tablespoons (½-ounce) grated fresh Parmesan cheese
½ cup Summertime® Gourmet Salsa (MORE? They have 1/2 a cup of green onions?)
1 cup (4-ounces) shredded reduced-fat sharp cheddar cheese
¾ cup diced low-fat, reduced fat ham
Vegetable cooking spray

1. Preheat oven to 350°

2. Place first 5 ingredients in a food processor and process 1 minute or until smooth.
Combine egg substitute mixture, Summertime® Gourmet Salsa, egg mixture and ham into
9-inch pie plate coated with cooking spray.

3. Bake at 350° for 40 minutes or until set. Let stand 5 minutes before serving. Serve with
remaining Summertime® Gourmet Salsa.

Yield: 6 servings (serving size: 1 wedge).

Summertime® Gourmet Salsa Pizza

Preparation time: 10 minutes
Cooking time: 16 minutes

6 (7-inch) pita bread rounds, unsplit
Vegetable cooking spray
1 (16-ounce) can fat-free refried beans
½ cup Summertime® Gourmet Salsa
¾ cup (3 ounces) preshredded Mexican 4-cheese blend (a blend of Monterey Jack, cheddar,
queso quesadilla and asadero cheeses)
1 ½ cups thinly slice iceberg lettuce
6 tablespoons nonfat sour cream
Remaining jar Summertime® Gourmet Salsa

1. Preheat oven to 400°

2. Place pita rounds on a large baking sheet coated with cooking spray, overlapping slightly.

3. Bake at 400° for 18 minutes or until crisp, turning after 4 minutes. Let cool slightly on a
wire rack.

4. Combine beans and chiles in a bowl; stir well. Spread about 1/ cup bean mixture over
each pita round (support the underneath side of the pita with your hand so it does not
crack). Divide Summertime® Gourmet Salsa evenly among pizzas using a slotted spoon and
sprinkle with cheese. Place pizzas on baking sheet.

Easy Summertime® Gourmet Salsa Chicken Fajitas


2 tablespoons balsamic vinegar
1 tablespoon lime juice
2 teaspoons olive oil
1 teaspoon fresh parsley
2 (4-ounce) skinned, boneless chicken breast
2 curly leaf lettuce leaves
2 tablespoons Summertime® Gourmet Salsa
2 (6-inch) flour tortillas
Remaining jar Summertime® Gourmet Salsa
Red onion rings (optional)

1. Combine first 4 ingredients in a shallow dish. Add chicken, turning to coat. Cover and
marinate in refrigerator 1 to 8 hours, turning chicken occasionally.

2. Place chicken on broiler and broil 10 minutes on each side or until chicken is done.

3. Divide chicken, lettuce and salsa evenly between tortillas; roll up. Serve with remaining
Summertime® Gourmet Salsa on the side and garnish with onion if desired.

Summertime® Gourmet Salsa Low-Fat Chicken

4 (4-ounce) skinned, boned chicken breast halves
Cooking spray
¾ cup Summertime® Gourmet Salsa
¼ cup Parmesan cheese

1. Preheat oven to 350°.

2. Place chicken in an 11 x 17-inch baking dish coated with cooking spray.

3. Spoon Summertime® Gourmet Salsa evenly over chicken; top with green onions. Sprinkle
with cheese. Cover and bake at 350° for 30 minutes. Uncover and bake an additional 10
minutes or until chicken is done. Serve with hot cooked rice or baked potatoes.

Yield: 4 servings

Stuffed Chicken with Summertime® Gourmet Salsa

4 (4-ounce) skinned, boned chicken breast halves
Cooking spray
1 (8-ounce) low-fat cream cheese
¼ cup Summertime® Gourmet Salsa
1 cup bread crumbs
toothpicks
1 jar Summertime® Gourmet Salsa

1. Preheat oven to 375°.

2. Pound chicken breast halves to make them an even thickness. Cream low-fat cream
cheese and Summertime® Gourmet Salsa. Place cream cheese mixture in the center of each
chicken breast and wrap chicken around cream cheese mixture. Secure with toothpick

3. Sprinkle bread crumbs over chicken. Bake at 375° for 30 minutes. Serve with remaining jar
of Summertime® Gourmet Salsa

Summertime® Gourmet Salsa Bake


2 cups Summertime® Gourmet Salsa
4 cups sliced zucchini
1½ cups frozen whole-kernel corn, thawed
1½ cups (6 ounces) shredded reduced-fat sharp cheddar cheese, divided
¾ cup crushed baked tortilla chips
Vegetable cooking spray
½ cup nonfat sour cream
½ cup chopped green bell peppers
½ cup Summertime® Gourmet Salsa

1. Preheat oven to 350°.

2. Combine zucchini, corn, ¾ cup cheese and chips in a bowl; stir well. Spoon zucchini
mixture into a 13 x 9-inch baking dish coated with cooking spray. Pour 2 cups Summertime®
Gourmet Salsa over casserole; bake uncovered at 350° for 25 minutes. Sprinkle remaining
cheese over casserole and bake an additional 5 minutes.

3. Spread sour cream over casserole and sprinkle with Summertime® Gourmet Salsa using a
slotted spoon.

Yield: 8 servings.
